Put 1 teaspoon full of pearls in 5 ounces of water (170F) in either a Gaiwan or glass tumbler. Steep for 2-3 minutes and enjoy. Multiple infusions with this tea is not ucommon. For each successive infusion, increase steeping time. This tea may be best served gong fu style with a small Yixing clay teapot. Fill a pre-warmed pot 1 teaspoon full and cover with hot water (160-175°F) and leave to infuse for 30 seconds to 2 minutes.
